Lazy Spanish Tortilla that still tastes AMAZING
300gr white potatoes
1 yellow onion
4 gloves of garlic
10gr fresh parsley
salt and pepper to taste
Mince the garlic, peal the onion and slice it (not too thick). Put this in a pan with some olive oil and let it soften. Meanwhile, peal the potatoes and cut them into thin slices (about 2-3mm). Layer them in the pan, add some salt and pepper and put a lid on it. Let this simmer for about 10-15 minutes or until the potatoes are cooked. Stir in between when necessary (so it doesn’t stick to the bottom of your pan). In a separate bowl, crack the eggs and add the fresh parsley (chopped) with some more salt and pepper to taste. Spread the potatoes evenly in the pan (if this wasn’t the case anymore due to stirring) and add the egg-mixture. Set the stove to a medium-low heat and let everything cook for about 15-20 minutes. Shake the pan regularly in between to make sure it won’t stick. Once the top is cooked through, you can serve it up! Enjoy!
I prefer to serve this for lunch or dinner with some bread and/or roasted vegetables
