High Protein Plantbased Rice

250gr giant beans
250gr brown lentils
2 bell peppers
2 handfuls of green olives
3 tbsp tomato paste
400gr basmati rice
4 cloves of garlic
1 white onion
2 tbsp fresh parsley
1 tsp turmeric
salt and pepper to taste

Cut the onion and mince the garlic. Sear this in a pan with some olive oil, turmeric and black pepper. Cut the peppers and olives and add this to the pan. Rinse the beans thoroughly and add these as well. Cut the parsley very finely and add this to the pan before stirring everything together.

Add the tomato paste and rice (dry) to the pan. Poor in water until everything is covered to the point that it seems like a soup (you’ll need about 500-750mL). Keep stirring everything until it starts boiling. Then add a lid to the pan and turn off the heat. Keep the cover on for about 15-20 minutes. Enjoy!

I prefer to mealprep this and eat it for lunch throughout the week, but it is also perfect for dinner!
