Best Ever Vegan Nachos

250gr nacho chips
150gr vegan minced meat
100gr corn
1 bell pepper
1 white union
4 cloves of garlic
2 tbsp tomato puree
2 tbsp any nacho spice mix
100gr vegan mozzarella cheese

Mince the union and garlic and sear it in a pan with some olive oil. Once they’ve softened, add the minced ‘meat’ and the spices. While you let these sear in the pan, cut the bell pepper into small pieces and rinse the corn. Add them to the pan as well along with the tomato puree. Once all the veggies have softened a bit and the flavors have blended, you can start layering everything up in an oven dish.

Start by adding a layer of nachos, followed by the sauce. Top this off with the cheese. Then add another layer of nachos, sauce, and lastly cheese. Put this in the oven for about 15-20 minutes at 180C/350F. Enjoy!

I prefer to serve this for dinner :)
