Best Ever Gluten Free Banana Bread

2 big ripe bananas
2 tbsp maple syrup or honey
1 egg
1 tsp cinnamon
1/4 tsp vanila extract
6 medjool dates
a handful of pecannuts (or other nut of choice)
250gr self rising almond meal (beware, if you use another type of meal, such as oatmeal, then reduce to 200gr as those are dryer than almond meal)
pinch of baking soda
pinch of salt
(optional: 100gr (vegan) chocolate chips)

Mash the bananas before adding the maple syrup/honey and egg. Mix everything together until well combined. Add the cinnamon, vanilla extract and salt and whisk everything once more. Cut up the medjool dates and nuts in chunks (as big as you prefer) and add it to the mixture as well. Then add the almond meal and baking soda. It is a rather wet batter, which is normal. Line a loaf tin with baking paper and poor in the batter. Bake it in the oven for 45-50 minutes (or until a toothpick comes out clean) at 180C/350F. Enjoy!

I prefer to serve this as a snack, for instance as a pre- or post-workout snack or just with some coffee or tea
