Healthy Vegan Apple Pie Oatmeal

Healthy Vegan Apple Pie Oatmeal

1 red apple (I used pink lady)
40gr rolled oats
1 - 1 1/2 cups almond milk
1/2 tsp cinnamon
pinch of salt
optional: 1 tbsp maple syrup, handful of raisins

Cut the apple into small pieces. Sear those in a small pan with some of the almond milk if needed (to deglaze the pan). Add the cinnamon and let it sit until the apple pieces have softened. Add the almond milk and oats and stir until the oats have completely soaked up the milk. Add a pinch of salt and serve with a drizzle of maple syrup and/or a handful of raisins. Enjoy!

I prefer to serve this as a comfort meal but usually for breakfast, especially on cold mornings!
