NO OIL Red Beet Hummus
Red Beet Hummus
1 can of chickpeas
2 large beets (I got organic pre-cooked ones)
1 tbsp tahini
1 tbsp cumin
juice of 1 lemon
salt and pepper to taste
Drain and rinse the chickpeas. Add them to a food processor with the tahini, lemon, cumin, salt and pepper. Blend until smooth. Then add the beets (preferably cut into a few pieces to ensure it blends well) and blend again until smooth. Add salt, pepper, and/or water according to your preference to enhance taste and smoothness. Enjoy!
I prefer to serve this with some veggies as a snack, on some toast/crackers, or as a base on a wrap!
