Coconut Tomato Soup

1 can coconut milk
1 kg of fresh tomatoes
2 large onions
1/2 tbsp garlic paste (or about 5 cloves)
2 cubes vegetable stock
fresh basil, oregano, sage, rosemary, thyme, and oregano
(I got an Italian fresh herb mix and added the fresh basil myself)
1 tbsp all purpose spice mix
salt and pepper to taste

Cut the onions into large chunks and add it to a large pan suitable for soup with some olive oil. Stir and add the garlic paste and all purpose spice mix. While the onions soften, cut the tomatoes and add them to the pan with the coconut milk. Stir again before adding the vegetable stock and fresh herbs.

Since I hate spending a lot of time on picking the leaves off of the herbs, I add them (but not the basil) to a big tea bag (that you normally put your tea leaves in) and drop it in the pan. The basil I cut up and throw it in the pan as it blends well (unlike for example the thyme). I let it simmer for at least 30 minutes before fishing the tea bag out of the pan again. This way I have all of the flavour and none of the twigs from the herbs!

Blend everything until smooth and add water to reach your desired consistency. Enjoy!

I prefer to serve this as a warm lunch or for dinner
