Chickpea Bulgur Meal

100gr (dry weight) bulgur
1 cucumber
1 can chickpeas
100gr red cabbage
2 sweet peppers
15gr fresh parsley
1 tbsp olive oil
splash of red wine vinegar
juice of one lemon
1 vegetable stock cube
1/2 tbsp garlic paste
salt and pepper to taste

Add the bulgur to a large bowl and poor boiling water over it until it sits about 1cm above the bulgur. Add the vegetable stock cube, stir, and let this sit while you prepare the rest. Cut the cucumber, parsley and red peppers (and the cabbage if you didn’t buy it pre-shredded) and add these to a second large bowl. Rinse the chickpeas and add these as well.

Mix the olive oil, vinegar, lemon, garlic paste, salt and pepper until they are well combined and add the mixture to the veggies. By this time the bulgur should be done as well. Drain it and add to the veggies or serve separately, depending on the occasion and/or your preference! Enjoy!

I prefer to serve this for lunch or dinner and it can be enjoyed hot or cold!
