Veggie Couscous Bowl

50gr whole wheat couscous
5 veggie balls
1/2 sweet pepper
1 tbsp chopped fresh parsley
1 clove of garlic
2 tsp tomato paste
salt and pepper to taste

Start by preparing the couscous. Add the couscous to a bowl with 50mL of boiling water and add the tomato paste. Stir well and cover it with a lid. Meanwhile cut the sweet pepper and garlic. Sear them in a pan with some olive oil (if necessary) and season with salt and pepper. Sear the veggie balls as well. Once the couscous is cooked, stir in the fresh parsley and season it with salt and pepper. Lay it out on a plate or put it in a bowl and add the sweet pepper and the veggie balls. Enjoy!

I prefer to serve this for lunch or dinner
