2 (whole wheat) wraps or whatever type you have left over
200gr of your favourite or left over veggie > I used zucchini
100gr (vegan) cheese
3 cloves of garlic
1 tbsp spice mix
salt and pepper to taste

Take your pre-cut veggies out of the fridge and start searing them in a pan (I had some pre-cut zucchini left over from my mealprep, but you can use any you have on hand). Add the spice mix, salt and pepper to the pan and stir until the zucchini has reduced in size.

Then take your wraps, and divide your veggies over the two. Lay the cheese on top and fold them closed. Alternatively, you can put all the veggies and cheese on a single wrap, spread evenly, and then put the other wrap on top. I just prefer to fold my wraps in half! Then put them in a small roaster oven for 5-7 minutes or until the wraps have become golden brown. If you don’t have a roaster oven, you can also put them in the pan for about 2 minutes per side. This will require some pancake-flipping-skills though! :)

I prefer to have this for lunch or dinner when I have very VERY little time!
