Stuffed “Beef” Pepper

375gr vegan minced beef
1 can of tomato paste
800gr vegetable mix (I used a Chinese blend)
6 sweet peppers
275gr (uncooked) basmati rice
Turmeric, smoked paprika, dried oregano, salt, pepper
some spinach, sweet chili sauce and/or olives to garnish

!!! DISCLAIMER !!! This makes a big batch, about 4 bigger or 5-6 smaller portions. It is therefore perfect for mealprep.

Start by sauteing the vegetable mix with the spices until the veggies are completely soft. Then add the minced ‘beef’ and tomato paste. Let this sit on a medium-high heat while cutting the peppers in half and removing the cores. Now you can start filling the peppers and put them in the oven for 20 minutes at 180C or 350F. While you wait for your peppers, you can prepare the rice. After the rice is cooked and the peppers are nice and soft, you can plate everything up together, garnishing it with some cut fresh spinach, olives, and/or sweet chili sauce. Enjoy!

I prefer to serve this for dinner or as a left-over for lunch
