Lentil Olive Filling

5 cups cooked lentils (about 2-3 cups uncooked lentils)
1 cup of olives
1/2 cup sun-dried tomatoes
juice of 1 lemon
1 tbsp (preferably fresh) oregano
3 tbsp (preferably fresh) parsley
salt, pepper to taste

If you’re using uncooked lentils, cook these first. It helps with cooking time but also digestion to soak them first for a few hours, preferably overnight. Once cooked, rinse them thoroughly, drain them, and add them to a bowl with the lemon juice. Cut up the olives and tomatoes into smaller chunks and add them to the bowl as well. Finely chop the oregano and parsley and add them to the rest along with some pepper and salt to taste.

This works great as a dip with some crackers or as a filling for wraps. It also makes for a great salad!
