Red Lentil Stew

300gr cauliflower heads
100gr green beans
2 red bell peppers
300gr dried red lentils
1 can of coconut milk
2 tbsp tikka masala paste
300gr Surinam long grain rice

500mL vegetable stock
1 large white onion
4 big cloves of garlic
1 tbsp turmeric
1 tbsp cumin
handful of fresh parsley
salt and pepper to taste
optional: pumpkin seeds to garnish

Cut the onion and mince the garlic. Put some olive oil in a pan and add the turmeric, cumin and some black pepper. Gently stir before adding the onion and garlic. If needed, add a little bit of water to prevent it from burning. Slice the bell pepper into strings and roughly cut the green beans and cauliflower heads. Add this all to the pan and add the red lentils too. Poor in the coconut milk and tikka masala paste. Add about 500mL of vegetable stock or water with a cube of vegetable stock.

Let everything simmer for 15-30 minutes. During this time you can also prepare the rice. If you want, you can also substitute the rice for (sweet) potatoes, quinoa, or any other type of rice you have at hand. Once the lentils are cooked and the sauce has thickened, it is time to eat! Poor it over some rice, top it off with some pumpkin seeds, and enjoy!

I prefer to serve this for lunch or dinner
