Date Night Pasta Dish

300gr durum wheat pasta
250gr mushrooms
2 bell peppers
1 zuchhini
1 onion
4 big cloves of garlic
750mL tomato cubes
150gr vegan cheese

20gr fresh basil
3 tbsp dried oregano
1/2 tbsp turmeric
salt and pepper to taste
optional: a few handfuls of chopped olives

Preheat the oven to 180C/350F. Cut the onion and mince the garlic. Put a little bit of olive oil in the pan and add the turmeric along with some black pepper. Mix it gently before adding the onion and garlic. Add some water if necessary to glace the pan. Now cut the rest of the vegetables and add them to the pan. Once they’ve softened, add the tomato cubes with the basil, oregano and some more salt and pepper to taste. This is also where you add the olives if you want to add them!

While your sauce is cooking, boil the pasta. Once it is al dente, drain the pasta and add it to the sauce. Make sure the pasta and sauce is combined well before transferring it to a baking dish. Put the vegan cheese on top and let it sit in the oven for 15-20 minutes or until the cheese is melted.

A little tip: I always like to add some extra dried oregano and black pepper on top of the cheese before putting it in the oven. It really gives a lot of extra flavor!

I prefer to eat this for dinner
