Easy Chicken Curry

300gr chicken thigh/breast
1 zucchini
2 large carrots
1 jar of chicken curry sauce #
brown rice ##

#try to find one with as little preservatives in it as possible, or make it yourself by re-creating the ingredients list (so coconut milk, curry spice, union, garlic, pineapple, etc.). I chose a jar that already contained some veggies like capsicum, so I didn’t have to add much more.
## the amount of rice really depends on your goals/hunger. For myself, I eat around 30gr (uncooked) but my bf for example eats around 70gr with each serving.

!!! DISCLAIMER - This provides you with about four portions, so 2 days of food for 2 persons or 4 days for 1, etc. You can keep the sauce in your fridge for about 3-4 days, but you can keep it longer if you freeze it in batches.

Start searing the chicken in a pan with some olive oil (and bring some water to a boil for the rice > this depends on how you cook your rice, since there are different methods which all work in my opinion, it’s just what you prefer). Cut the zucchini and carrots in pieces and add it to the chicken. While those soften, start cooking the brown rice. Add the jar with sauce to your chicken and veg and let it simmer until the rice is done. Once the rice is cooked, add it to a plate with some sauce and enjoy your meal!

I prefer to serve this for dinner
