Stuffed Sweet Pepper

1/2 Capsicum
ca. 150gr ground chicken
300gr Asian vegetable mix (or any veggie leftovers)
Some grated cheese (optional)
30gr brown rice (uncooked)
Salt, pepper, smoked paprika, cumin,
Dried oregano, chili powder

Sear the ground chicken with the spices. Add the chili powder according to your personal preference. In the meantime, cook the brown rice. Fill half a capsicum with the chicken and top it off with a little bit of grated cheese. Put this in the oven for about 10 minutes at 200C. Throw the vegetables in the pan with the chicken and sear until done. Plate up the rice, capsicum and chicken-vegetables separately or sear the rice with the chicken and vegetables in the pan before plating it up.

I prefer to serve this for dinner
